Kari VanBrose's Beany Beefy  Burritos

No Trout camp is complete without some South of the Border fare.  The instructions for this delightful dish were stolen from one of my main fishing buddy's wife who in turn stole it from her darling daughter, who in addition to preparing some swell meals, has entertained a few AuSable river trout out in front of the cabin.  Thanks Kari!

Ingredients: 

 

Main Course

Condiments (at consumer's discretion)

1 Pound Meat (Ground Elk, Beef, etc)

Chopped Lettuce

1 Can (10 oz) Enchilada Sauce (Mild, Med or Hot)

Chopped Onion

2 cups Brown Gravy (build from meat drippings – or buy a jar)

Chopped Tomato

1 Pkg. Burrito Seasoning

Chopped Black Olives

1 Can Refried Beans

Sour Cream

1 Large Mound of Cheese (Jack, Cheddar, etc.)

Guacamole (Yuck)

10 Flour Tortillas

More Cheese

 

Your Favorite Hot Sauce or Salsa

 

Cooking Instructions:

Preliminaries

1. Brown the meat.  Reserve the drippings and set aside.

2. Build a Brown Gravy by adding 12 oz. milk and 2T flour to the drippings and whisk until a gentle boil.

3. Return the meat to the skillet, mix in the Burrito seasoning and set aside again.

4.  In a separate bowl, combine Gravy with Enchilada sauce and set aside.

5. Lightly oil a 10X14 Pan. Grab a tortilla and spread a base layer of refried bean, a layer of the meat, spoon on a little saucy gravy (save some for finishing), top with cheese and roll into a Burrito like cylinder.

6. After all your tortillas are filled and neatly rolled in your pan, top with the remaining saucy gravy and cheese then bake at 350° for 20 minutes.

Plating and Presentation

Assemble all of your chosen condiments and get ready to dig in.  Carefully extract one or two Burritos from the pan and decorate accordingly.

 

Some traditional side dishes that work well would be Black Beans and Rice, Spanish Rice, Refried Beans with Cheese, Margaritas, Pepto Bismol and Ice Cream.  You made your bed – you sleep in it.

 
   
The finished product.  I like mine with a dollop of sour cream and just a touch of Lettuce and Salsa.  Don't forget to finish with a little Ice Cream.
